The tasting will be guided by cheesemaker Stanislav Dmitrișin, alongside Wine Republic’s chef-sommelier Vadim Brînzeanu, who will lead the wine pairing for each stage of the evening.

Apple and pear cider, handmade by Stanislav Dmitrișin — a light start designed to prepare the taste palate for tasting.

CHEESEMAKER’S STORY
“Ded Pihto” is a small family business dedicated to producing soft cheeses of the French group, handcrafted with care and attention to detail.
The founder and head cheesemaker, Stanislav Dmitrisin, is a public catering technologist with over 20 years of experience in the hospitality industry. For the past 8 years, he has focused entirely on studying and perfecting French-style cheese-making techniques.
By his side is Svetlana Dmitrisina — a trusted partner and main assistant. Svetlana creates handmade artisanal jams, specially designed to complement and highlight the flavors of the cheeses.
These jams will be served during the tasting, giving all participants the chance to discover and appreciate their role in flavor harmony.
The team’s journey began in December 2017, with their first professional training in Odessa. Since then, it has been a challenging yet exciting path:
• multiple online and offline courses with renowned master cheesemakers;
• direct collaborations with ingredient and equipment suppliers in France;
• adaptation of French techniques to the characteristics of local milk;
• development of their own cheese-making technologies.
Today, the team is in the final stage of building a modern cheese dairy, where cheeses will be handcrafted with the same attention to quality and authenticity.
